Golden Sweet Cornbread

Here is a gf cornbread recipe we've made a few times. It's pretty good, and not too dry. Once or twice we made it with corn masa/flour (what you use to make corn tortillas), instead of the regular gluten-free flour. We got the gluten-version from allrecipes.com.



Golden Sweet Cornbread (Gluten-free)

1 cup rice flour
1 cup yellow cornmeal
1/2 teaspoon xanthan gum
2/3 cup white sugar
1 teaspoon salt
3 1/2 teaspoons
baking powder
1 egg
1 cup milk
1/3 cup vegetable oil 

1. Preheat oven to 400 degrees F (200 degrees C). Spray or lightly grease a 9 inch round or square cake pan. 

2. In a large bowl, combine flour, cornmeal, sugar, salt and baking powder. Stir in egg, milk and vegetable oil until well combined. Pour batter into prepared pan. 
3. Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.

new design + name

As of 1-3-12: I've re-named my blog name (which used to be "Hanunyah's Sweet Creations") to "Ranch Girl's Sweets 'N' Treats". "Sweet Creations" is a pretty common name, so I figured I'd change it to something a little different ;). My URL is still the same, though.

Also, a big thanks goes to my older sister (@ CountryGirlWebDesign.com) who has re-designed my blog and fixed-up all of the HTML. So, I hope you enjoy the new layout!
