Chocolate Peanut Butter Cookie Bars

Well, yesterday morning I was woke up by mom yelling that the pig was having piglets (she had 7). And today, we got up about 5:30 am. to go to the Tulsa Fair, because my oldest sister entered some bunnies in the bunny show. We got back late, that's why this post is soo late today :).

Here are a few pics of the animals that were at the petting zoo at the fair.

Anyway, here is the recipe and a picture of the bars. They are just peanut butter cookies spread in a pan with a chocolate addition. They are pretty good, but they were originally named Chewy Chocolate Peanut Butter Bars , they weren't chewy but still good. I used rice flour and potato starch, and some xanthan gum. The recipe was from BettyCrocker.com.



Chocolate Peanut Butter Bars (Gluten-free)

cup gluten-free flour

teaspoon baking powder

teaspoon salt
1/2
cup butter, cut into pieces
1/2
cup crunchy peanut butter
1
cup packed brown sugar
1
egg yolk
1
teaspoon vanilla
1
bag (12 oz) dark chocolate chips (2 cups)

cup salted dry-roasted peanuts, coarsely chopped
  1. Heat oven to 350°F. Spray 13x9-inch pan with baking spray with flour. In small bowl, stir flour, baking powder and salt; set aside.
  2. In medium microwavable bowl, place butter and peanut butter. Microwave on High 30 to 45 seconds or until butter is melted. Add brown sugar and egg yolk; stir until mixed. Stir in vanilla and flour mixture. Stir in 3/4 cup of the chocolate chips. Spread in pan.
  3. Bake 20 to 25 minutes or until just firm to the touch. Remove from oven; immediately sprinkle with remaining 1 1/4 cups chocolate chips. Let stand 2 to 3 minutes or until chips have softened. Spread softened chips evenly over top. Sprinkle with peanuts. Cool on cooling rack. Cut into 8 rows by 6 rows. Store in airtight container.

new design + name

As of 1-3-12: I've re-named my blog name (which used to be "Hanunyah's Sweet Creations") to "Ranch Girl's Sweets 'N' Treats". "Sweet Creations" is a pretty common name, so I figured I'd change it to something a little different ;). My URL is still the same, though.

Also, a big thanks goes to my older sister (@ CountryGirlWebDesign.com) who has re-designed my blog and fixed-up all of the HTML. So, I hope you enjoy the new layout!
