Happy New Year!

So, I gave you one last great recipe. Now it's time for the last post.

We're having a big party tonight with lots of singing, music and friends. Oh, and lots of balloons that are hanging from the rafters right now (to let down at midnight!).

I hope you have lots of fun and a sweet time as well. There are many recipes in my recipe archives to sweeten things up! I've made peanut butter cups, cake and cupcakes, neapolitan cookies, and my sisters have made great things as well including molasses cookies and coconut candy bars!

Lemon Bars

Here's another bar recipe I made.



Lemon Bars (Gluten-free, Corn-free, Dairy-free)

1 cup shortening or lard (you may use butter if you aren't dairy-free)
1/2 cup white sugar
2 cups rice flour
4 eggs
4 tablespoons rice flour
1 1/2 cups white sugar
2 lemons, juiced (1/3 cup juice)



1. Preheat oven to 350 degrees F (175 degrees C).
2. In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9×13 inch pan.
3. Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 4 tablespoons flour. Whisk in the eggs and lemon juice. Pour over the baked crust.
4. Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool. For a festive tray, make another pan using limes instead of lemons and adding a drop of green food coloring to give a very pale green. After both pans have cooled, cut into uniform 2 inch squares and arrange in a checker board fashion.

Happy New Year!

Hi! I hope ya'll had a Happy New Year! We had a party last night with lots of yummy snacks and sweets (everything was gluten-free, too!). I didn't get to posting until now because we went to an auction early this morning.
       Here's some pictures, and I will, Lord willing, post the recipes that I made that I haven't put up here yet.

Monkey Bars

Bars are really easy, quick, yummy, and they freeze good. So, I've been making bars to stock the freezer with goodies, and I made mostly only bars for the New Year's party tonight.

This recipe is easy and it makes a big pan of yummy bars.





Monkey Bars (Gluten-free, Corn-free, Dairy-free)

  • 1 2/3 cups mashed ripe bananas (about 5 bananas)
  • 3/4 cup packed light-brown sugar
  • 1/4 cup oil
  • 1/4 cup milk (or milk substitute - you could use water, I used goat milk)
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 3/4 cups rice flour
  • 1 cup chocolate chips




    1. Heat oven to 350ºF. Line a 15 x 10 x 1/2-in. baking pan with nonstick foil (let the foil extend about 2 in. above pan at both ends).2. Whisk mashed bananas, sugar, oil, milk, eggs, vanilla, baking soda, cinnamon and salt in a large bowl until mixed thoroughly. Whisk in flour just until blended; gently stir in 1/2 cup of the chocolate chips.3. Spread batter in prepared pan. Sprinkle remaining chocolate chips on top. Bake 15 to 20 minutes until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack.4. Holding foil by ends, lift from pan onto a cutting board. Carefully cut lengthwise in 4 strips and then cut each strip in 10; remove foil.

new design + name

As of 1-3-12: I've re-named my blog name (which used to be "Hanunyah's Sweet Creations") to "Ranch Girl's Sweets 'N' Treats". "Sweet Creations" is a pretty common name, so I figured I'd change it to something a little different ;). My URL is still the same, though.

Also, a big thanks goes to my older sister (@ CountryGirlWebDesign.com) who has re-designed my blog and fixed-up all of the HTML. So, I hope you enjoy the new layout!
